The same coastal hotel can host two very different evenings ashore. At Four Seasons Resort Mallorca at Formentor, chef Javier Hoebeeck has reshaped the menus at Shima and Llum i Sal, pairing a Nikkei-influenced approach with a distinctly Mediterranean beachfront restaurant.

Two settings, one island pantry

Shima blends Japanese technique and Peruvian flavours with ingredients sourced on Mallorca. Llum i Sal takes a different route, using its beach setting and the island’s culinary traditions for a meal that can extend from late afternoon into the evening.

For a yachting party cruising the north of the island, the contrast makes two separate visits plausible without assuming that either restaurant operates yacht berthing or a tender landing.

The producers behind the dishes

The hotel says more than a dozen local suppliers support the menus, including fish businesses Bluefin and Xutipesca and artisanal cheese and bakery producers. Formentor’s estate honey, olive oil and wine also contribute to its food programme.

That sourcing story is more useful to a traveller when it leads to a sense of place rather than a checklist. It invites questions about seasonal catch, the current menu and how produce is prepared.

Chef Javier Hoebeeck’s approach

Hoebeeck, previously associated with Michelin-starred Fusión19, joined the resort in 2025 and has developed the distinct restaurant concepts over time. The August announcement describes the completion of that menu work, not a wholly new hotel opening.

At the beach venue, executive chef Francesco Mannelli has collaborated on the final approach. Diners should check opening days and the current evening-service format before building a passage around a reservation.

A shore evening at Formentor

A long lunch or sunset dinner can complement a coastal cruise, with local transport planned from a legitimate landing point or marina. A good restaurant reservation and a safe return passage are two different bookings.
