NUNA has secured a permanent home inside Four Seasons Hotel Miami after a year as a pop-up. The Nikkei restaurant combines Japanese techniques with Peruvian flavours under chef Jaime Pesaque, supported by chef de cuisine Nazaev Esparza.
The decision turns a temporary collaboration into an ongoing dining address in Brickell. It also introduces a tasting-counter format alongside the regular restaurant experience.
A meeting of Peru and Japan
The menu includes ceviche, sushi rolls, yakitori and hot dishes that move between the two culinary traditions. The house ceviche uses seafood in leche de tigre, while Arroz con Pato combines duck and foie gras with Nikkei influences.
The food is intended to express a specific culinary style rather than simply offer Japanese and Peruvian dishes on separate pages. The restaurant's identity remains connected to Pesaque's original concept.
A closer view at the counter
The tasting counter puts guests nearer the preparation and introduces a curated series of smaller dishes. Highlights from the official announcement include lobster blini with caviar and uni crispy rice with bone marrow.
Toro tostada and Wagyu with truffle are also listed. The format offers a more guided alternative while leaving diners able to explore the broader menu.
A restaurant for Miami visitors
Four Seasons Miami occupies a Brickell location, making the restaurant accessible to residents and hotel guests alike. Its permanent status changes the planning horizon from a limited pop-up to an ongoing destination.
Guests should still check opening hours, reservations and menu changes before travel. An established residency does not mean every tasting-counter seat is available without booking.
The next chapter after a year
The permanent arrangement was announced in June after the restaurant's first year at the hotel. The new counter gives the kitchen a distinct space for closer interaction with guests.
This story reports the long-term change and the new dining format rather than suggesting the restaurant first opened in September. Current prices and final inclusions require confirmation.
