A recognised chef returns to a familiar city

Hilton has appointed Grey Spaces, the hospitality group founded by chef Mashama Bailey and restaurateur Johno Morisano, to develop dining across the planned Signia Hilton Savannah. The August 2026 announcement concerns a hotel scheduled to open in 2028, so it is a forward-looking culinary partnership rather than a restaurant already taking reservations.

Bailey is recognised for her work at The Grey, the restaurant she and Morisano opened in a former Savannah bus terminal in 2014. Their partnership now spans dining and cultural projects, including an address in Paris. The new Signia commission gives them a different scale of operation on their home city's riverfront.

Five venues with distinct potential roles

The proposed Signia Savannah hotel will contain five dining and drinking venues, including an all-day restaurant, lobby bar and rooftop destination. Grey Spaces will influence concept development, menus, beverage choices and service experience. Hilton says the final offerings will be distinct from the group's existing Savannah restaurants.

That is an ambitious promise whose achievement cannot yet be judged. A successful rooftop bar, for example, requires different pacing and presentation from an all-day restaurant serving convention visitors and local residents. Buyers of a future hotel experience should wait for specific menus and venue names before treating promotional plans as operating facts.

Southern food interpreted for a broad audience

Bailey's cooking draws on Southern and coastal Georgia food traditions while reflecting influences from other regions and her professional training. The project aims to make those histories visible in a setting used by locals, holidaymakers and conference delegates. It is the kind of partnership in which culinary authorship matters more than attaching a celebrity chef's name to a menu.

Ingredient sourcing, skilled kitchen teams and sensitive interpretation will determine the experience once the hotel opens. A chef with a substantial award record still needs strong operations to deliver consistently across multiple venues. The announced collaboration offers a creative starting point but does not guarantee any particular dish will be served.

A future riverfront gathering place

Signia Hilton Savannah is planned as a 444-room headquarters hotel for the Savannah Convention Center, with more than 34,000 square feet of meeting facilities, an outdoor pool and Club Signia. Its location on the waterfront may make it useful for visitors who combine a city break with cultural events or meetings.

The hotel is not expected before 2028. For travellers heading to Savannah sooner, Bailey's existing work offers a separate way to explore the local dining scene, subject to reservations. The significance of the new partnership is a planned collaboration between local culinary expertise and a major hospitality development, not an immediately bookable restaurant. The eventual menus will also need to work for visitors whose schedules are dictated by events across the adjoining convention campus. That operational challenge is part of the creativity required in a major hotel.
