Four Seasons Hotel George V, Paris has unveiled its 2026 Yule Log, created by Executive Pastry Chef Michaël Bartocetti. The dessert turns the familiar French festive tradition into a sculptural object inspired by the imagined tracks of Santa’s sleigh through snow.
Under the white exterior, the flavour reference is Poire Belle-Hélène. Bartocetti uses pear, dark chocolate and vanilla as the foundation, then adds texture and freshness through cardamom and almond.
The outside is designed like a snow-covered landscape
The log uses sweeping curved lines that suggest sleigh tracks gradually revealing the outline of a Christmas tree. The surface is deliberately restrained in colour, allowing shape and shadow to create most of the visual impact.
This kind of pastry design sits between food and sculpture. It has to survive transport and cutting while still presenting the precision expected from a decorative centrepiece.
Pear and chocolate provide the classic core
Williams pear mousse surrounds a Cuban black chocolate cream, with pear confit sharpened by green cardamom. The combination stays close to the logic of Poire Belle-Hélène while giving the pastry chef room to reinterpret texture.
An almond and vanilla crunch adds contrast beneath the softer components. A pain de Gênes biscuit with toasted almond pieces coated in vanilla white chocolate completes the layered structure.
The dessert will also appear at Christmas Tea-Time
Guests who do not want to order the full eight-person log can taste a plated version at La Galerie during the hotel’s Christmas Tea-Time programme. That makes the creation part of the hotel experience as well as a takeaway festive product.
The full Yule Log opens for pre-order in October and collection in December. At this level, the buying process becomes closer to commissioning a seasonal object than picking up an ordinary cake.
