Bertrand Noeureuil has joined Four Seasons Hotel George V Paris as chef of L'Orangerie, with responsibilities also covering La Galerie, the bar's food and room service. His arrival connects several hospitality experiences under a new culinary direction.

Noeureuil developed his own approach after working with established chefs and building a reputation in Bordeaux. The hotel describes a philosophy grounded in finding the relationship between product, season and cooking method.

An approach shaped by nature

Noeureuil refers to his cooking as a language of correspondences, taking cues from an ingredient's maturity and the character of the season. He is seeking to reveal qualities already present in the produce rather than impose an unrelated effect.

The concept moves beyond simply changing a printed menu four times a year. Technique and texture are meant to respond to what is available.

Different techniques across the year

Winter suggests slower cooking and richer sauces, while spring brings more herbal and vegetable-led expressions. Summer favours immediacy and freshness, including raw preparation or wood-fire cooking.

Autumn allows deeper broths, roasted notes and more concentrated jus. These examples outline the chef's philosophy rather than promise particular dishes on all dates.

A role across several venues

The appointment reaches beyond L'Orangerie to include La Galerie, the bar's food and in-room dining. Those locations have different service requirements, making consistency and flexibility part of the role.

The bar's separate new mixology leadership is being reported on its own terms. Noeureuil's responsibility concerns the food programme rather than replacing the bartender.

A new Paris chapter

The chef was identified by La Liste as Talent of the Year 2026 and now brings his ideas to one of the city's established palace hotels. His direction can be assessed as new menus are introduced.
