A seasonal dining programme in Palm Beach
Florie's by Mauro Colagreco at Four Seasons Resort Palm Beach has introduced an eight-part wine dinner series scheduled from October 2026 to May 2027. The resort announced the programme on 16 October, bringing recognised wine estates together with a small-group dining format.
Each dinner is designed around a four-course menu prepared under Colagreco's culinary direction. Guests begin with a welcome glass and canapés on the terrace before gathering in a private dining room for the main experience.
Bordeaux launches the programme in October
The first evening, scheduled for 29 October, is dedicated to wines from the Bordeaux portfolio of Bernard Magrez, including Château Pape Clément. A South of France dinner with Gérard Bertrand follows on 18 November, moving the focus to the character of Languedoc.
The schedule is arranged as a progression through wine-growing regions rather than simply a succession of luxury labels. The chef says the approach begins with the character and provenance of each wine, around which a complementary menu is then developed.
Napa Valley and Champagne in the new year
The 2027 dates begin on 21 January with California's Bouchaine Winery and its Carneros roots. Harlan Estate follows on 9 February, presenting an opportunity to explore wines associated with one of Napa Valley's best-known Cabernet Sauvignon producers.
Champagne Laurent-Perrier is the focus of the 25 February dinner. The series then returns to Bordeaux on 18 March for an evening dedicated to Château Lafite Rothschild, with pairings selected to reflect the estate's style.
Oregon exploration and an Opus One finale
An Oregon wine dinner is scheduled for 15 April, introducing guests to the state's evolving wine landscape. The series concludes on 20 May with an Opus One evening, framed as the most exclusive event of the programme.
Most dinners are limited to 24 guests, while the May finale offers only 12 places. Small seating capacity is intended to encourage conversation and closer exploration of the wines, but places and availability should be confirmed directly with the resort.
A destination for private dining
For travellers spending time in Palm Beach, the series offers another reason to plan around the resort's culinary calendar. A carefully timed dinner can complement an extended stay, but it is not included automatically with a room reservation.
Four Seasons directs prospective guests to its booking channels and the restaurant for the current reservation arrangements. The announced estates and dates are future events, so menus, guest participation and booking availability should be reconfirmed before making travel commitments.
